My first day back to work after New Years started with my laptop flatlining, having to clean the office pantry microwave after my oatmeal blew up in it, finding myself completely and frantically over my head in a new bit of work I personally requested the week before and a wind-tunneled trip to the new Apple store to gaze at the shiny brightness. In short, I had hoped to be gently eased into 2008, but since that wasn’t in the cards for me, I ended it with a dinner of French Toast. What? Tell me that you’re not jealous.

I know. I know what you’re thinking: this is out of control. This non-stop sugar/butter/egg/flour assault needs to stop. Our hips! Our abs! For the love of all that was once taut and perky, Deb, no more desserts! And I want you to know, I couldn’t agree more. I, too, strive for balance. I, too, swore those jeans were looser before Thanksgiving.

robert linxe’s chocolate truffles

My obsession with Robert Linxe’s truffles started as a matter of coveting. My roommate at the time had more suitors than she could count on two hands and both feet, thus I didn’t even bother trying to keep up, but there was this one–and I never met him, but still called him my favorite–who insisted upon “borrowing” her for the afternoon of her birthday and at Metropolitan Museum presented her with two items: Kissing in Manhattan and a box of chocolate truffles from La Maison du Chocolat.

If there is one thing that Alex has shown me the light of over the course of our relationship–but fortunately, there are many, including ribs, pickles, bourbon and skiing–it’s the consummate beauty of a vacation that entails absolutely nothing. No water skiing, no scuba diving, no afternoon of shopping, no conga lines: just hours upon hours on the beach, tearing through one book at a time. Can you imagine how awful this must be after months of doing things and being ‘on’ and producing things of value for other people in exchange for earning a living? I’ll tell you, it’s a big adjustment.

It has been over a year since I sounded-off about my mild irritation with Michael Chiarello–salient takeaways included that I found him fussy and often in excessive use of needlessly pretentious ingredients–and I’ve spent most of it feeling bad about it. I mean, he cooks honestly; he uses as good ingredients as he gets his hands on and he’s not afraid of adapting old stand-bys to make them more feasible for entertaining. These are all good things. I will not now nor ever abide throwing fistfuls of carefully cultivated gray salt into boiling pots of pasta water, but I’d rather pay attention to someone who cares enough about the nuance in flavor that they create than someone who acts like it doesn’t exist.

I’ve been thinking this week–probably more than anyone should–about what it means to be a perfectionist. I never considered myself one before; fussy, maybe; needly and exacting at times. Oh, and I have been known to cut cookie bars with a ruler, but I never thought it was about being crazed with perfection–I just don’t understand why anyone wouldn’t use a tool readily available to them.

Nope, I’m thinking that being a perfectionist isn’t about so much what you do, but how you react when little, obviously unsubstantial things go wrong. You over-browned an edge of the cake but it has absolutely no bearing on the final flavor. You accidentally measured wrong and now the aforementioned brownie bars aren’t all even.
